Description

This preparation is a real gustatory nugget, made from the famous "Limou Amani Sia" black lime from Shiraz. This exceptional condiment is the fruit of a unique preparation process, in which the black lime is meticulously transformed to reveal its powerfully spicy notes.

Each lemon is harvested before ripening, then boiled in salted water to prevent fermentation and strengthen the rind. The limou is then transported to the desert, where it is buried in hot sand for 3 to 5 weeks. Under the effect of this treatment, the bark takes on a dark color, ranging from brown to black, and hardens until it becomes deliciously brittle. As for the dry pulp, it acquires candied nuances, giving this condiment a unique character.

This Boteh reveals almost smoky, spicy, acidic, lemony notes. On the palate, the acidity is incisive, the bitterness elegant, with notes of candied citron and hints of licorice. 

This characterful product is perfect for the following recipes:

  • Sweet: chocolate, chocolate mousse, fruit salad
  • Savory: Breast of duck, foie gras, scallops, scampi, beef skirt steak or onglet, root vegetables, mackerel, sardines, sea bass, on an oyster.

Recipe history

This little lemon is originally a lime, also known as Lime. It is boiled in salted water, then cooled in iced water before being buried under the desert sand in Iran. It remains under the sand for 3 to 5 weeks. Following this process, the lemon dehydrates, turning black and taking on woody, smoky flavors, while retaining the acidity and fragrance of the lemon. It goes very well with seafood, asparagus and other vegetables with buttery accents. In vinaigrettes, as an accompaniment to meat or in sauces. Not forgetting pastries with fruit or chocolate. As you can see, the uses are limited only by your imagination. The uniqueness of this product lies in its length in the mouth and its multiple notes that progress on your palate.
